Chicken Shawarma

Hello again, blog-readers!
I realised it has been quite a while since I last posted. It took me a lot of time to figure out what I should blog about cooking-wise. This is one of those few dishes that amateur me has managed to cook right and it is also a favourite in the household.
This recipe has been taken from Dedemed - however I have tweaked it a bit in minor areas. She's a fantastic cook and an absolute inspiration. If it wasn't for her, I doubt I would have ever learned to make a shawarma! Thank you so much Dede =).



(Makes about 7-8 shawarmas)



Ingredients:

500-600 grams of boneless chicken breast, cut into thin slices
4 tbsp of yogurt (if possible, try removing the moisture by hanging it in a muslin cloth)
2  tbsp of shawarma spice (Can be purchased at a local Carrefour outlet)
2 cardamom pods, crushed
1/4 cup lemon juice
1/2 tsp cinnamon powder1/2 tbsp ginger-garlic-chilli paste
2 garlic cloves- crushed
2 packets of medium sized lebanese bread
salt as per taste (around 1 1/4 tsp)
1/4th tsp paprika
3 tbsp olive oil + 1 tbsp for the pan
5-6 pickled cucumbers, sliced (you may add other pickled vegetables or lettuce and tomato if you wish)
french fries (too much is never enough!)
1 cup tahini sauce

Tahini Sauce

Ingredients:

1/2 cup tahini paste1 clove garlic, crushedfew tbsp of yogurt as per tastefew tbsp of water5 tbsp lemon juice (can be adjusted to your liking)To make the sauce, mix all the ingredients together. Once it comes to a dressing-like consistency, pass it through a sieve and store.



Procedure:



1. Take the sliced chicken and add in all the ingredients except the pickled cucumbers and sauce.


2. Mix well and add olive oil to the mixture.3. Keep it inside the fridge for as long as possible. (2 hours- 1 day)


4. Add 1 tbsp of oil on a pan and heat it. Once it is fairly hot, add the chicken pieces and cook for about 7-10 minutes.


5. On a plate, take the lebanese bread and open it. Spread the tahini sauce generously and add some cucumbers. On this, add chicken and fries.


6. Wrap it and toast it on a frying pan to heaten it up.7. Serve with tabouleh or any other Arabic delicacy that pleases your tastebuds!!
